The Domaine is in the hands of
Evelyne and Jacky Gaulthier. Jacky started out on his own at 17
when he took over his uncle's estate and bought some additional
plots to offer a wide range of terroir wines.
When Evelyne's parents retired,
the estates were united to form Domaine de Colette. Jacky is
extremely eco-aware and practises "Lutte Raisonnée" as well as
using only organic manure.
The vineyards of Domaine de Colette are cultivated using "Lutte
Raisonnée" or minimal intervention as Jacky Gaulthier's approach is
very ecological.
Only organic manure is used as well as grassing over and shallow
ploughing. The soil is granitic and the bush trained vines average
40 years old. The harvest is all carried out by hand with yields
never exceeding 45 hl per ha.
