Fattoria Il Lago is a Tuscan Winery and Olive
Oil producing country estate, situated just outside of florence
near the small town of Docomano.
The estate belonged to the noble Florentine family of
Bartolini-Vivai-Salimbeni hundreds of year ago, then in 1962 the
farm was purchased by the Spagnoli family who began the slow
process of restoring many dilapidated buildings and overhauling the
vineyards and replanting the Sangiovese grape vines.
Harvesting is carried out by hand, sorted and destemmed before a
gentle wine making process. Some of the wines follow a process of
lightly drying the grapes in the sun before vinification in a
process that the Italians called appassimento, a process that helps
concentrate the sugars and polyphenols.
