Delmoro is predominantly Garnacha with Bobal and Syrah from a four-hectare plot, whilst Carmen gives the stage to 100% Bobal from a two-hectare vineyard, aged in concrete egg and both produced entirely biodynamically.
Viticulture
The grapes come from terroir specific vineyards to express the very best of the varieties they work with. Vines are aged between 15 and 80 years old. For the Carmen all the work is carried out biodynamically.
Winemaking
Delmoro is predominantly a Garnacha with some Bobal and Syrah in the blend, fermented separately and aged in stainless steel and oak and comes from a 4 hectare single vineyard. Carmen is 100% Bobal from a 2 hectare single vineyard and aged for 12 months in a single concrete egg. Whole bunch fermented, these are bottled unfined and unfiltered, with minimal, if any sulphur addition.
