Jaddico, Marmorelle, Uggio and Punta Aquila stretch from the Adriatic coast to the hinterland of Brindisi. Tommaso's goal was to show Salento wine at it's very best and through the diverse range that his family now offer, made from local varietals like the fascinating Susamaniello and more well known ones such as Primitivo, they are well on their way.
The Uggio Santa Teresa vineyards in Brindisi where planted in 2000. Sandy soils with spurred cordon vines planted at 4000 vines per hectare. Yields are 80kg per hectare.
A fermentation in stainless steel tanks without malolactic fermentation or oak aging.
No oak treatment.
Light straw yellow with green nuances. Delicate bouquet of mango, banana, peach, grapefruit and orange blossom. Smooth and persistent on the palate with fresh acidity.
Fish-based dishes such as seafood caserecce, linguine with prawns, orecchiette with turnip tops, tagliolini with cherry tomatoes and rocket, stuffed calamari, grilled seafood.
