Celler del Roure have become the pioneer of quality wine in Valencia.
Owner Pablo Calatayud is committed to nurturing and championing the indigenous varieties of the region, most notably the Mando and Verdil grapes, both of which have been on the edge of extinction.
A white wine from the red skinned Mandó grape from the same vineyards as used in Safra is harvested early to enitice fresh and delicate Mediterranean style flavours.
Soft pressing and cold fermentation of the free run juice with indigenous yeast. This is fermented as you would with a white wine, direct pressing without maceration and no skin contact. Fermentation in stainless steel tanks and finished in old clay underground amphoras for 6 months.
No oak treatment
An attractive pale pink. Very refreshing pure fruit with citric flavours and a zinc minerality. Light fresh and delicate.
This light and delicate wine is best with equally delictae fish, rice and pasta dishes.
