Producer Profile

Equipo Navazos is a group of friends who have united over a shared passion for the treasures of Jerez, Sanlúcar, El Puerto and Montilla.

Working with local producers to identify high quality butts of sherry with finesse and complexity which they then bottle and offer in very limited amounts. As well as producing sherry, Equipo Navazos has collaborated with other winemakers including Dirk Niepoort and Sergi Colet to develop some intriguing and characterful wines from Jerez and sparkling wines from Penèdes.

Viticulture

Colet Navazos Extra Brut are sparkling wines under the appellation Penedés produced according to the traditional (champenoise) method of secondary fermentation in bottle, starting with base wines sourced from Colet vineyards. The southern presence is felt in the secondary fermentation and especially in the use of different dosage wines. All of the fruit comes from certified organic vineyards.

Winemaking

Aged for 30 months on the lees before degorgement.

No oak treatment

Tasting Note

Bone-dry, it has virtually no residual sugar, but still a refreshing sparkling wine. Rich, toasty and savoury, with a creamy mousse, a dry finish and lots of nutty, honey notes. With the added twist of saline from the aging under flor yeast, and the addition of Palo Cortado and Amontillado which gives it a subtle complexity.
