Producer Profile
The story of Mas Olivier officially began in 1982, the date of the Faugères’ AOP classification, however the unique terroir and landscape which have shaped their history are far older.
Facing the Mediterranean sea but located at 300 metres above sea level Faugères benefits from the warmth and long summers of the Mediterranean, yet heavier spring and autumn rainfall and cooler temperatures than elsewhere in the Languedoc.
Viticulture
These 100% schist soils are located on the foothills of the Cévennes, looking to the South. They benefit from plenty of sunshine combined with cool summer nights.
Winemaking
A traditional white wine fermentation in concrete tanks, including lees contact and battonage over a three month period.

Tasting Note
Shiny gold in colour, the wine is lively and crisp, with medium-bodied notes of melon, citrus blossom and flowers. Perfectly balanced between richness, fruitiness and freshness.
Food Matching
This works perfectly well on its own, but even better partnered with chicken or scallops.
