Once Upon A Tree, The Wonder Pear Ice Wine, Herefordshire, England, 2015
Simon Day, an experienced winemaker, had some form of epiphany in 2007 while in the corner of an orchard in Herefordshire and founded Once Upon A Tree.
He decided to embark on a cider journey with the fundamental assertion ‘We will let the fruit do the talking’. And the approach seems to have borne fruit, if you pardon the pun. Along the way they have been awarded BBC’s Radio’s ‘Drinks Producer of the Year’ through their innovative and humble approach involving co-fermentation with grape skins and tackling the frosty challenge of ice cider.
Dragon Orchard is located in the heart of apple growing countryside in Herefordshire and has been in the family since 1887. It benefits from fertile Herefordshire clay and loam soils and is protected from harsh winds by the surrounding hills. It’s an accredited LEAF farm (Linking Environment and Farming) and the farmhouse has been awarded for its sustainability.
No oak treatment
Very powerful, a big palate with intense flavours of apricot, quince and a hint of soft caramel. Sweetness, acidity and a long, soft finish, perfectly balanced.
Enjoy as an aperitif, partner with foie gras or pâté, with blue cheese, or chocolate based desserts.
