Farming organically to help draw out and capture the best that his terroir can offer, he produces exquisite examples of what Fiano used to be before over production and international popularity devalued this delicate, delicious wine. As a champion of the underdog, Guido also produces a scintillating Greco di Tufo.
The vineyard is on a splendid hillside with excellent exposure, at a high altitude where the winds help to keep the vines dry so that mildew cannot form. A modern Guyot framing system and drastic annual pruning allow the yield to be optimised to ensure quality over quantity, and whilst guidleines state 100 quintals are expected for every hectare, they only produce 40 quintals of extraordinary grapes here.
The harvest time is dictated by the maturity of the grapes, which are handpicked, de-stemmed and lightly pressed to extract only the juice. A low temperature fermentation and then 12 months on lees in stainless steel ensure the wine is fresh, vibrant and complex.
