Château Ponzac, Cahors, Maintenant ou Jamais, South West, France, 2021

Producer Profile
Matthieu Molinié and his wife Virginie having studied winemaking techniques are dedicating their lives to the production of Cahors, making it their life's work, creating cuvées from Malbec and reflecting the diversity of their terroir and the uniqueness of their property.
Covering 28 hectares of vineyards in prime Cahors territory, with vines averaging 25 years, the Ponzac wines are made up of five cuvée, each a result of meticulous vineyard management and selection and an exacting process of winemaking and blending.
Viticulture
Since 2018, the vineyard is managed organically with respect for the environment to preserve and bring about a rich and living soil to the future generations. This work requires a demanding and restrained practice and a willingness to be conscious and aware of the preservation of biodiversity. It is a real struggle with big challenges everyday to be in service to their soil, and of their team to practice with integrity and ethically. They began a few years ago with the plantation of trees adapted to the climate, creating hedges and wooded areas as an integral part of their vineyard. Other projects, such as beekeeping and the return of animals to the fields are strengthening their intentions. Constant research regarding adaptation and improvement is the real challenge they face in seeking to create a rare wine with an exceptional terroir cultivated in biodynamics.
