With a rich history spanning several decades, this vineyard is synonymous with exceptional quality and refinement in the realm of fine wine. Founded by Jean Chauvenet, the winery began as a passionate endeavor to celebrate and nurture the gifts of nature.
Viticulture
‘Vieilles Vignes’ is crafted from older vines on limestone and clay soils. An established traditional family-run domain located right on the edge of Nuits-Saint-Georges appellation, just a few meters from Vosne-Romanée. The domaine covers 9 hectares on vineyards and includes 8 appellations from the Côte de Nuits. Since 1994, the domaine has turned to low-input cultivation to minimise the use of chemical treatments and is working towards Organic certification. Since 2003, the vines have been grassed-down to limit soil-erosion and temper the soil's natural vigour in the interests of restricted yields. Christophe Drag also practices rigorous disbudding. The old vines contribute to the wine's depth and complexity, reflecting the distinctive character of Nuits-St-Georges.
Winemaking
Grapes are hand-harvested and meticulously sorted. Vinification focuses on gentle extraction to preserve the purity of fruit and finesse of tannins. Fermentation occurs in temperature controlled stainless-steel tanks. The wine is aged in oak barrels (small percentage new), with a focus on used barrels to avoid excessive oak influence.
Tasting Note
A beguiling deep ruby hue. A rich bouquet, packed with ripe red fruits and subtle spice and balsamic notes. The palate is complex, offering big and bright flavours of black cherry and a little of the spice found on the nose. This wine has been created with finesse and designed for longevity, it boasts velvety tannins and a balanced finish.
Food Matching
Pairs beautifully with rich pasta dishes, aged cheeses, roasted meats, and game birds.
