With winemaking experience in the Maipo Valley in Chile, he has been able to get the best out of both the New and Old Worlds and now focuses on his region's speciality of Picpoul de Pinet producing a complex, deep and lively example of this fresh, vibrant wine.

Viticulture

The vineyards of Domaine de Montredon are planted on clay and limestone soils, ideally suited to retaining freshness in the warm Languedoc climate. Vines average around 15 years of age, delivering consistent fruit quality while maintaining vitality. With generous sunshine and healthy growing conditions, intervention in the vineyard is kept to a minimum, allowing grapes to reach optimal ripeness naturally. Picpoul is harvested slightly later than many red varieties, ensuring full flavour development while preserving its hallmark acidity.

Winemaking

Winemaking at Domaine de Montredon is clean, precise and technically controlled, designed to preserve aromatic purity. Grapes are machine‑harvested at maturity, gently pressed, and fermented in temperature‑controlled stainless steel tanks. Cooler fermentations maintain freshness without stripping away regional character. Wines are stabilised and filtered prior to bottling, resulting in consistently crisp, mineral‑driven whites that perform strongly both as aperitifs and alongside seafood.
