DOMAINE DE PALLUS, France

We first met Bertrand Sourdais when he was the winemaker for Dominio de Atauta, one of the finest wineries in Ribera Del Duero.

Now at the helm of this family-run 18 hectares domaine in Chinon, Bertrand is already changing and improving the vineyard management and has brought new techniques to the cellar. As a result, he is expressing the true potential of Domaine de Pallus: silky, deep rich Cabernet Francs without any of the green vegetal character so often showing in the lesser wines from this region.

Viticulture

They have decided to cultivate their soils using ecological methods, not only out of a commitment to respecting the ecosystem but also because they believe that working the soil in this way is the best way to translate the unique qualities of their terroir into the grapes. Guided by biodynamic principles, Bertrand Sourdais tends to his vineyard with natural treatments, including the biodynamic 500 preparation and his own crafted compost, fostering a healthy and vibrant ecosystem that enhances the expression of the land, they also work the land organically with respect for the local ecosystem.

Winemaking

The winery works with 100% destemming and vinification is carried out in 30 hl open-wooden vats, fermentation is for around 25 to 30 days and ageing usually carried out in old French Oak.
