Domaine Vincent Dauvissat has long been regarded as being the finest estate in Chablis.

Founded in the 1970s by Robert Dauvissat, the Domaine has remained a family affair to this day, passed down through three generations. Robert’s son, René, he played a key role in building the Domaine’s esteemed reputation. His son, Vincent, then joined his father and now oversees the estate. A devoted following among France’s top restaurateurs keeps export quantities limited, but despite their scarcity, Dauvissat’s wines have earned acclaim from critics around the globe.

Viticulture

Grapes are sourced from sustainably farmed, low-yielding vineyards on Kimmeridgian limestone soils around Chablis. The estate employs organic principles, favouring natural soil health and vine balance.

Winemaking

Fermentation takes place in temperature-controlled stainless steel tanks to preserve the purity and freshness of fruit. The wine undergoes ageing on fine lees with periodic bâtonnage to add subtle texture and complexity, without overshadowing the inherent minerality. No new oak is used; the focus is on precision and elegance. Bottled unfined and unfiltered to maintain vibrancy.

Tasting Note

A crystalline and piercing expression of terroir. It reveals delicate aromas of green apple, wet limestone, sea spray, and subtle white flowers. The palate is precise and lively, with vibrant acidity lifting flavours of citrus zest, chalky minerality, and a faint whisper of green almond. Pure, steely, and refreshing with a long, saline finish that reflects the Kimmeridgian soils perfectly.
