Viticulture

The vineyards are established on low-vigour, well-drained soils of granitic origin, featuring clay subsoil and laterite stone. The vines are carefully managed to maintain a healthy balance between fruit production and vegetative growth, with yields deliberately reduced to 5.2 tons per hectare. These mature, naturally low-yielding vines underwent meticulous crop selection, with all damaged or unripe grapes removed prior to harvest. The fruit, uniformly ripe, was harvested based on detailed analysis, taste, and the physiological condition of the vines.

Winemaking

"The grapes were partially de-stemmed, with approximately 30% remaining as whole bunches and placed directly into custom-made 5-ton stainless steel fermenters. The initial 60% of fermentation proceeded naturally, while the remainder was completed using a neutral Rhone yeast. During the early stages of fermentation, the cap was manually punched down twice daily, followed by pump-overs during the final two days. Upon completion of fermentation, the wine was pressed and transferred directly into 80% seasoned barrels and 20% terracotta vessels, while the press wine was kept separate. Malolactic fermentation occurred naturally in both oak and clay. All barrels used were tight-grained French Allier and Compiègne oak. The wine underwent a single racking during the first year of élevage. After 14 months in oak, the finest barrels and terracotta eggs were selected for bottling without filtration, which may result in a harmless deposit forming in the bottle.

Tasting Note

The Foundry Syrah 2021 is deep, opaque bright purple-ruby in colour with youthful rim. The enticingly perfumed bouquet is exotic, with hints of wild herbs, violets, plum fruit and has a pronounced savoury and spicy character. The palate is intense and rich with generous ripe fruit and structured, silky tannins. There is a delicious, lingering, fruit and spice aftertaste.
