Bodegas Dominio de Cair, Cair Cruz del Pendon, Ribera del Duero, Spain, 2022

Producer Profile
The Luis Cañas Family has uncovered a remarkable gem in the small town of La Aguilera, nestled within the prestigious DO Ribera del Duero.
This authentic and rustic land offers a refreshing departure from the conventional—a unique landscape that stands out in one of the most exciting and celebrated wine regions of Spain. Here, vineyards blend harmoniously with surrounding forests at nearly 900 meters above sea level, where each plot is intimate, rarely exceeding half a hectare. The average age of our vines is approximately 45 years, with many venerable plants ranging between 50 and 100 years old—each contributing depth, complexity, and character to the grapes they bear. This is truly an exceptional terroir, where the wines reflect the soul and authenticity of the land itself—crafted with passion, tradition, and a profound respect for nature.
Viticulture
These venerable vines, planted between 1941 and 1947, are rooted in the historic municipality of La Aguilera. The grapes are sourced from four distinct plots within the esteemed Pago de La Cruz area, nestled at an average altitude of 840 meters. Spanning just 2.52 hectares, these old vines thrive on loamy sandy soils set across gently sloping terraces with an eastward exposure—conditions that favour slow ripening and aromatic complexity. With average yields of only 1,800 kg/ha, production is deliberately limited, ensuring exceptional concentration and character in every grape.
Winemaking
Hand-harvested with care into small 11 kg boxes to preserve berry integrity, the grapes undergo a cold pre-fermentation maceration to amplify their vibrant fruit expression. A meticulous double sorting ensures only the finest grapes make it through. Fermentation takes place in concrete tanks, enhancing texture and purity. The wine is then aged for 18 months in second-use 500-litre French oak barrels, allowing it to evolve gracefully while maintaining balance and elegance.
Tasting Note
A captivating deep cherry red with a brilliant clarity that draws you in. The nose is intense and complex, revealing signature mineral nuances alongside delicate violet and lavender aromas, all underscored by a fresh balsamic lift that adds remarkable aromatic depth. On the palate, it greets you with a smooth, expressive fruit character, perfectly balanced by silky tannins and vibrant acidity, finishing with enticing fruity and spicy notes. A wine of elegance and finesse, crafted to delight the senses.
Food Matching
Grilled or roasted meats such as lamb, beef, and game. It also complements rich poultry dishes like duck with a berry glaze or herb-roasted chicken.
