Domaine Chatzivaritis, Mosaic Red (PGI- Slopes of Paiko), Kilkis, Goumenissa, Greece, 2019

Producer Profile
Founded in 1994 by Vagelis Chatzivaritis, the Chatzivaritis Estate is located in the heart of Goumenissa, Macedonia, Greece.
The winery spans 20 hectares of organically farmed vineyards across the regions of Bindabla, Filyria, Plagia, Pentalofos, and Griva. The estate cultivates indigenous Greek grape varieties such as Xinomavro, Negoska, Roditis, Malagousia, Muscat, and Assyrtiko, while also growing small plots of international varieties like Sauvignon Blanc, Merlot, Chardonnay, and Cabernet Sauvignon. In 2017, Vagelis’ daughter Chloi returned to Greece after winemaking studies in France and Portugal. She brought with her a modern, low-intervention philosophy, introducing natural winemaking techniques, including pétillant naturel and carbonic maceration.
Viticulture
The grapes are sourced from organically cultivated vineyards laid out in a linear formation in Bidabla, located in the renowned wine-growing region of Goumenissa. The vines thrive in light-textured sandy-clay soils, which provide excellent drainage and contribute to the wine’s vibrant freshness and balance.
Winemaking
The winemaking begins with a gentle pre-fermentation cold maceration lasting two days, which helps to extract delicate aromas and color. Following this, the temperature is allowed to rise gradually to trigger a controlled alcoholic fermentation. Once fermentation is complete, the wine undergoes an extended lees contact for three months, enhancing its texture and complexity before bottling.
Tasting Note
This elegant blend consists of equal parts 25% Xinomavro, 25% Negoska, 25% Cabernet Sauvignon, and 25% Merlot, combining native Greek varieties with classic international grapes to create a harmonious and distinctive red wine. A light red wine that captivates with its subtle violet hues and a floral bouquet dominated by fresh red berries, complemented by sweet nuances of jasmine and a hint of white pepper. On the palate, it is light-bodied and refreshing, offering juicy tannins and a smooth, fruity finish.
