Guillaume Alliès is a talented winemaker who pays great attention to detail. With winemaking experience in the Maipo Valley in Chile, he has been able to get the best out of both the New and Old Worlds and now focuses on his region's speciality of Picpoul de Pinet producing a complex, deep and lively example of this fresh, vibrant wine.
Viticulture
The vineyards are planted on clay and limestone soils. The vines are on average 15 years old and yield 55 hl per hectare. The sunny south of France is perfect for producing healthy, ripe grapes without too much need for intervention. Despite its relatively high acidity this is fairly late ripening grape here and is harvested after some of the red varieties.
Winemaking
The grapes are machine harvested at maturity. On arrival at the winery they are destemmed and gently pressed in the pneumatic press. Fermentation is in stainless steel at a controlled cool temperature to preserve the aromas but not so cold that all sense of terroir is removed. The wine is cold stabilised and filtered prior to bottling.

Tasting Note
Crisp, clean, mineral and simply perfect with the local Oysters. With a delicate nose of exotic fruit and white flowers lifted with remarkably fresh acidity and just a hint of saltiness on the finish. A classic from this region and immensely popular right now.
