Albert Bichot's Domaine Long-Depaquit estate is located at the heart of the village of Chablis, in Burgundy’s Yonne department and produces consistently excellent wines.

A stroll through the estate’s grounds, which boast centuries-old trees and a rose garden, offers a unique, timeless experience. The Domaine’s is spread across 34 distinct plots, planted on gently sloping hillsides with gradients ranging from 5% to 20%. These varied exposures create a patchwork of terroirs, each contributing unique qualities to the wine. By vinifying each plot separately, the individual characteristics of each terroir are preserved, adding depth and complexity to the final blend.

Viticulture

The Vaucopins vineyard is predominantly limestone soil overlying subsoil composed of Kimmeridgian marls. Vines are typically 30 years old and are all handpicked at harvest time.

Winemaking

85% of the must is fermented and aged in stainless steel vats and 15% in 1 to 4-year-old oak barrels. Finished aging in stainless steel vats for 2 months.

Tasting Note

The Vaucopins cuvée is the archetype of the minerality found in the wines of Chablis. A complex combination of fleshy fruit, notes of smoke and gunflint paired with a lively, vivacious structure. Highly concentrated flavours on the palate, which boasts exceptional length.
