Viticulture
On the northern heights of Santenay, the Terrasses de Bievaux are on the Bievaux climate, which names comes from a water source nearby. The vines are pruned using the single Guyot method, with all harvesting done by hand. Green vineyard work, including de-budding and leaf-thinning, is carefully carried out. A rigorous triple sorting process ensures grape quality—twice in the vineyard and once more on a sorting table at the winery.
Winemaking
Upon arrival at the winery, the grapes are immediately pressed. Fermentation is carried out at low temperatures to preserve the full range of aromas and flavours. Alcoholic fermentation begins in vats to ensure a steady process, and once it is underway, the wine is transferred into barrels. Only natural yeasts are used, allowing each wine to retain its unique charm and character.
Tasting Note
A delightful nutty note complements layers of toasty oak, buttery richness, and stewed apple fruit, all underscored by a pronounced flint and slate minerality.
