Christophe Cordier, Saint-Véran, Burgundy, France, 2023

Producer Profile
Christophe Cordier’s estate comprises 30-odd hectares over a number of Village appellations in the Mâconnais region, including Mâcon-Fuissé Pouilly-Fuissé and Saint Veran.
He produces balanced wines by harvesting fresh ripe grapes that concentrate naturally due to their low yields, and in a distinctive house style that is always concentrated, rich and full. The domain’s high-tech winery includes a gravity bottling facility and a raft of high-quality large French oak casks for ageing that are toasted under Christophe’s direct supervision.
Viticulture
Christophe seeks to express emotion in his wines. To accomplish this, he is not afraid to experiment, working alongside his team in the vineyards, bringing motivation, rigour and precision to the tasks. At Cordier they know that great quality wine always starts with outstanding quality grapes! He produces exceptional wines by investing the necessary time and attention and bringing all its know-how to bear: very short pruning, meticulous de-budding, manual thinning out the leaves, respect and preservation of soil life, hand-picking terroir by terroir, etc.
Winemaking
The full bunches undergo a gentle pressing, no decantation and a spontaneous fermentation using native yeasts.
Tasting Note
Refreshing, complex flavours with notes of citrus, pear, and white flowers. The wine exhibits a balance between fruitiness and acidity, with a subtly creamy texture. The use of oak in the winemaking process contributes to a buttery finish and hints of nuttiness.
Food Matching
Seafood like oysters, lobster, and grilled sea bass, as well as dishes with creamy sauces, semi-hard cheeses.
