Sébastien Vincenti of Domaine de Fondrèche is widely recognised as one of the two best producers in Ventoux and to make things even better, he keeps a reasonable pricing policy despite his ever-increasing reputation and growing international demand.
His wines from his 38ha domaine are very polished and seductive, yet he always aims to improve his technique. Sébastien is moving to organic culture and uses specific canopy management in order to produce ripe rich wines, with an overall harmony being the key. Viticulture
Sébastien is moving to environmentally conscientious philosophies, with discipline and rigour aimed at a low-interventionist approach and uses specific canopy management to produce very ripe and rich wines, whilst harmonising alcohol. No chemicals are used in farming and the pruning, ploughing and harvesting takes place according to the lunar calendar. For his white and rosé wines, the vines are planted on soils composed of sand and silt covering 10 hectares.
Winemaking
Domaine de Fondrèche is a gravity-fed winery to avoid pumping over and extra transfers between fermentation vessels. After de-stemming, the grapes are cold macerated in a stainless steel, temperature-controlled tanks before the alcoholic fermentation begins. The wine is aged on the lees in foudres and in wooden barrels for 6 months.
Tasting Note
A fresh, aromatic white wine with a luminous straw-yellow colour and subtle green highlights. The nose is expressive and elegant, showing layers of white peach, pear, citrus zest, and floral notes like honeysuckle and acacia. There’s a mineral edge that reflects the limestone-rich soils and a hint of spice, adding complexity. On the palate, it is clean, medium-bodied, and finely textured. The wine balances vibrant acidity with a smooth, slightly creamy mouthfeel, resulting in a harmonious and refreshing profile.
