Domaine de Fondrèche, Il était une Fois Rouge, Côtes du Rhône, France, 2022

Producer Profile
Sébastien Vincenti of Domaine de Fondrèche is widely recognised as one of the two best producers in Ventoux – and to make things even better, he adheres to a reasonable pricing policy despite his ever-increasing reputation and growing international demand.
The wines from his 38ha domaine are already polished and seductive, yet Sébastien is always striving to improve his technique. The estate follows environmentally conscientious philosophies, with discipline and rigour aimed at a low-interventionist approach. Sébastien is currently moving to organic viticulture, using specific canopy management techniques to produce ripe, rich and harmonious wines.
Viticulture
The terroir is old alluvium, limestone on the surface with a clay sandy texture beneath on the most beautiful exposure. The mountain in the centre of the Mount Ventoux Regional Nature Park bares its influence on the microclimate.
Winemaking
Vinification is made without sulphites to respect the fruit with 12 months barrel ageing.
