Sébastien Vincenti of Domaine de Fondrèche is widely recognised as one of the two best producers in Ventoux and to make things even better, he keeps a reasonable pricing policy despite his ever-increasing reputation and growing international demand.

His wines from his 38ha domaine are very polished and seductive, yet he always aims to improve his technique. Sébastien is moving to organic culture and uses specific canopy management in order to produce ripe rich wines, with an overall harmony being the key. Viticulture

38 hectares estate comprises three distinct vineyard sites located in three different communes: Mazan, Mormoiron and Saint Pierre de Vassols. The majority, a plot of 28 hectares around the domaine itself, consists of clay and limestone gravel soils, with the focus on red wine production. The vines are worked in a very natural way, the aim being to create perfect harmony between the vine, the soil and the environment. No chemical herbicides are used, and any treatments are 100% natural. The soil is worked mechanically in order to drive the roots deep and grass cover is encouraged in the rows. All stages of vineyard and cellar work are determined by the lunar calendar.

Winemaking

Traditional vinification for 21-28 days, with gentle pigeage in order to favour slow and progressive extraction. Matured for 18 months in 1/3 cuve, 1/3 foudres, 1/3 egg shaped cuves.

Tasting Note

a vibrant, contemporary expression of southern Rhône red, offering both power and finesse. Deep ruby in colour, it bursts with aromas of blackberry, ripe plum, crushed violets, and garrigue herbs, with layers of liquorice, black pepper, and a hint of graphite. The palate is plush and juicy yet beautifully structured, with velvety tannins and fresh acidity. Notes of dark fruit and spice are joined by a mineral edge and a subtle smokiness, leading to a long, energetic finish. A wine of balance, poise, and modern elegance.

A match for aubergine parmigiana, chargrilled portobello mushrooms, or venison sausages with red onion chutney.
