Christophe and Sébastien Jaume have now taken over from their father, Alain, and have carefully expanded this domaine.
The range is exceptional, with the whites equally superb as the reds: ‘La Fontaine’ is consistently rated one of the best white Châteauneufs while ‘Les Origines’ delivers the class expected of a premium cuvée with many international accolades. There is no weak wine here, and the well-priced Côtes du Rhône is produced from vines situated only metres away from those of the famous Château Beaucastel.
Viticulture
The blend comprises Grenache, Syrah and Mourvèdre, all grown organically in the northern sector of Châteauneuf‑du‑Pape, on Miocene-era marine molasse covered by alpine alluvium, characteristic galets roulés and clay-rich soils.
Winemaking
Grapes are hand-harvested, destemmed, and gently crushed. Fermentation takes place at around 30 °C with 18–20 days of maceration. The Grenache is mostly raised in concrete vats, while Syrah and Mourvèdre see time in second and third-use oak barrels before blending.
Tasting Note
This wine shows an intense dark‑ruby hue with uplifting aromas of ripe black and red fruits—such as blackberry, cassis and cherry—layered with spice box and garrigue. The palate is medium to full‑bodied, featuring firm yet refined tannins, vibrant acidity, and a long, precise finish with mineral and peppery undertones.
Food Matching
This Châteauneuf pairs wonderfully with rich dishes such as roast lamb, venison, braised beef or mushroom-stuffed poultry.
