Viticulture

The grapes are sourced from two parcels in Brézé, planted in 1933 and 1952, on calcareous clay soils with minimal topsoil over soft limestone bedrock. The vineyards are certified organic, and the vines are cultivated with sustainable practices, focusing on minimal intervention to express the unique terroir.

Winemaking

The grapes are gently whole-cluster pressed, with fermentation occurring naturally through native yeasts and without temperature regulation. The wine is then aged for 18 months in French oak barrels, developing complexity and depth. It is bottled unfiltered and unclarified, with only minimal sulphur added to preserve its pure expression.
