BODEGAS DOMINIO DE CAIR, Spain

The Luis Cañas Family has uncovered a remarkable gem in the small town of La Aguilera, nestled within the prestigious DO Ribera del Duero.

This authentic and rustic land offers a refreshing departure from the conventional—a unique landscape that stands out in one of the most exciting and celebrated wine regions of Spain. Here, vineyards blend harmoniously with surrounding forests at nearly 900 meters above sea level, where each plot is intimate, rarely exceeding half a hectare. The average age of our vines is approximately 45 years, with many venerable plants ranging between 50 and 100 years old—each contributing depth, complexity, and character to the grapes they bear. This is truly an exceptional terroir, where the wines reflect the soul and authenticity of the land itself—crafted with passion, tradition, and a profound respect for nature.

Viticulture

Embracing sustainable viticulture practices rooted in respect for the environment and the unique terroir of Ribera del Duero. While not certified organic, the estate prioritises minimal chemical intervention and employs environmentally friendly techniques to nurture healthy vineyards. Yield is carefully controlled on a per-vine shoot basis, allowing precise regulation that enhances grape quality and vineyard sustainability.

Winemaking

Grapes are hand-harvested into small 11 kg boxes to ensure optimal fruit integrity. Upon arrival at the winery, the fruit undergoes a pre-fermentation maceration in a refrigerated chamber to enhance aromatic expression. A double sorting table ensures that only the finest grapes proceed to fermentation. Fermentation occurs in small-capacity stainless steel tanks and oak vats, followed by aging in a selection of new French and American oak barrels from renowned cooperages. This careful attention to detail in both vineyard management and winemaking results in wines that authentically reflect the essence of their origin.
