Viticulture
The vineyards are located in the cool, misty valleys of Elgin, where maritime influence, altitude and ancient soils combine to create ideal growing conditions. Slow ripening preserves natural acidity and aromatic intensity, enabling the production of precise, elegant sparkling wines with freshness and structure.
Winemaking
All wines are crafted using the traditional sparkling wine methods, with secondary fermentation taking place in bottle. Extended lees ageing enhances complexity, contributing savoury brioche and nutty nuances, while careful handling ensures finesse, purity and a fine, persistent mousse.
