Producer Profile

Cascina Adelaide in the heart of Barolo is the lifelong dream of Amabile Droco – a dream born not only of a passion for the region’s wines, but also the diversity of the terroir to be found within the Barolo DOCG.

Having purchased an old farmhouse and accompanying vineyards in 1999, Amabile made considerable investments in a state-of-the-art gravity-fed winery and a top winemaking team that would set Cascina Adelaide apart from the rest. Yet it was his continuing ambition to own land in each of Barolo’s crus that made Cascina Adelaide a producer of note. As Amabile himself explains: “It’s the land that provides the difference, the wine provides the medium”. In keeping with this philosophy, no herbicides are used in the vineyards, and all of the harvesting and sorting is done by hand. Likewise, native yeasts and minimal sulphur are used during vinification, allowing the resulting wines to speak for themselves: deliciously complex Barolos that display an exacting attention to detail.

Viticulture

Grown on Guyot grown counter trellis trained vines with all vineyard work carried out by hand on a privately owned vineyard extending for 0.5 ha on South East facing slopes of Tortonian - Elvet soil.

Winemaking

The grapes are harvested by hand in baskets of up to 15 kg, and the must flows solely by gravity into the winemaking vessels. This process is carried out with the utmost care to avoid damaging the must and the grapes. Pumping over takes place during alcoholic fermentation, which is then followed by malolactic fermentation before the wine is transferred to wood for a minimum of 18 months.

Tasting Note

The would-be "king of wines" is famed around the world for it's unique, almost ethereal bouquet coupled with its ability to match the wonderful foods of the region. Concentrated grapes, carefully vinified then aged in oak for 30 months results in a perfumed yet robust wine with crisp, floral, red fruited character.

Opening to soft tones and delicate fruit nuances, the Cascina Adelaide 2021 Barolo Cannubi shows the complexity and the grace of this very special site. Loose sandy soils account for the elegance of this historic site with southeast exposures at 250 meters in elevation. In the case of Cascina Adelaide, the vineyards were created with a massal selection. The wine reveals small berry fruits, dried rose and spice over a mid-weight mouthfeel, ending with chalky tannins. This is a release of 3,500 bottles. 95 Points, RP, June 2025.
