Disznókő, Tokaji Late Harvest Furmint, Mad, Hungary (50cl.), 2022
Producer Profile
A First Growth since 1732 and part of the World Heritage Site of Tokaj declared in 2002, the 104 hectares of Disznókő vineyards have always been sought-after due to their supreme quality.
Once owned by influential aristocratic families and then nationalised, the estate has been under the ownership of AXA Millésimes since 2002. With its expertise and experience in Aszú winemaking, Disznókő is recognized today as being in the forefront of the renaissance of these truly great Tokaji wines.
Viticulture
Bunches or part of clusters containing intensely botrytised grapes were selected between mid to late October and early to mid November.
Winemaking
The grapes were gently whole-bunch pressed, with no destemming, before undergoing fermentation in stainless steel tanks. The individual lots were matured for an average of 18 months in Tokaj's traditional underground cellars, using oak barrels that had previously held two to three vintages. Following maturation, the wines were blended and stored in stainless steel tanks until bottling in July
Tasting Note
Light golden in colour, the wine offers a fresh and fruity nose, with aromas of pear, greengage, pineapple, and citrus. The palate is lively and juicy, medium-bodied, with vibrant acidity and a delicate hint of elegant bitterness.
Food matching
Perfect aperitif alone or with appetisers, chilled in summer on the terrace. Great with nibbles like prosciutto, olives, sun-dried tomato, pâté on toast.
