Disznókő

A First Growth since 1732 and part of the World Heritage Site of Tokaj declared in 2002, the 104 hectares of Disznókő vineyards have always been sought-after due to their supreme quality.

Once owned by influential aristocratic families and then nationalised, the estate has been under the ownership of AXA Millésimes since 2002. With its expertise and experience in Aszú winemaking, Disznókő is recognized today as being in the forefront of the renaissance of these truly great Tokaji wines.

Viticulture

The vineyard is a single estate in the Tokaj region, planted on south‑facing slopes with clay soils over volcanic rock, ideal for producing high‑quality fruit and encouraging noble rot. The microclimate, influenced by misty mornings and warm autumn afternoons, is particularly favourable for Botrytis cinerea, essential for sweet wine production. Harvesting is highly selective and carried out by hand over multiple passes, especially for aszú berries, ensuring only optimally botrytised fruit is picked.

Winemaking

Winemaking combines tradition with modern precision, particularly in the production of Tokaji Aszú. Individually selected botrytised berries are macerated with must or wine to extract sugars, acidity and flavour before fermentation, while Eszencia is naturally released and handled separately due to its extreme concentration. Fermentation typically takes place in stainless steel, followed by ageing in barrel in cool underground cellars, resulting in wines that balance richness, freshness and complexity.
