Sébastien Vincenti of Domaine de Fondrèche is widely recognised as one of the two best producers in Ventoux and to make things even better, he keeps a reasonable pricing policy despite his ever-increasing reputation and growing international demand.

His wines from his 38ha domaine are very polished and seductive, yet he always aims to improve his technique. Sébastien is moving to organic culture and uses specific canopy management in order to produce ripe rich wines, with an overall harmony being the key. Viticulture

The Domaine de Fondrèche estate is situated in Mazan, within the Ventoux appellation, at the southeastern edge of the Rhône Valley. The vineyards lie at higher altitudes (up to 400 meters above sea level) and benefit from significant diurnal temperature variation, which helps preserve acidity and freshness in the grapes. The Mistral wind, a defining climatic feature of the region, further aids in keeping the grapes healthy by reducing humidity and disease pressure. The estate follows sustainable and organic practices, emphasizing soil vitality and ecological balance. Cover crops, minimal synthetic input, and manual work in the vineyard are cornerstones of the approach. Yields are kept relatively low to ensure concentration and aromatic purity. The result is fruit that fully expresses the character of the Ventoux terroir—fresh, mineral, and vibrant.

Winemaking

After a brief cold soak, the fruit is gently pressed using pneumatic presses to extract only the finest juice with minimal phenolic content. This process preserves the delicacy and precision of the final wine. Fermentation occurs in temperature-controlled stainless steel tanks at low temperatures, typically between 14–16°C, to retain primary fruit aromas. The wine is aged on fine lees for a short period to enhance mouthfeel and complexity without losing freshness. Domaine de Fondrèche is known for its minimal interventionist philosophy—allowing the wine to speak for itself while preserving the natural balance and character of the fruit.

Tasting Note

A pale salmon-pink rosé with fresh aromas of red berries (strawberries, raspberries), citrus zest, and a hint of white flowers. On the palate, it's dry, crisp, and vibrant with a refreshing acidity and a mineral finish. Balanced and elegant, with subtle complexity.

Food Matching

Works well with Provençal classics like pissaladière, ratatouille, or tapenade on toasted bread.
