Producer Profile

Domaine Georges Lignier & Fils is a distinguished family-run estate located in Morey-Saint-Denis, at the heart of Burgundy's Côte de Nuits. Established in the early 20th century, the domaine has been under the stewardship of the Lignier family for over four generations. Since 2008, it has been led by Benoît Stehly, the nephew of Georges Lignier, who brings a blend of tradition and modernity to the estate's operations. Benoît emphasises a traditional approach to viticulture and winemaking, aiming to express the unique terroir of each parcel. The wines are celebrated for their elegance, aromatic purity, and faithful expression of terroir. They offer a more delicate and subtle profile compared to some neighbouring estates, making them approachable in youth while possessing the structure for aging. The estate's commitment to traditional methods and respect for the land has solidified its reputation as a producer of classic, high-quality Burgundy wines

Viticulture

Vines are grown on mid-slope terroir composed of marl and limestone with iron-rich clay, providing excellent drainage and mineral complexity. Sustainable vineyard management, low yields, and careful hand harvesting ensure fruit of exceptional quality, capturing the unique sense of place.

Winemaking

Fermentation takes place using native yeasts in traditional open wooden vats, with gentle extraction to preserve elegance. Ageing is carried out for 14 to 18 months in French oak barrels, 30–40% new, adding complexity and structure while respecting the fruit. The wine is lightly fined and filtered to retain clarity and finesse.

Tasting Note

The nose is expressive, offering aromas of black cherry, ripe raspberry, and forest undergrowth, intertwined with subtle notes of clove, leather, and a touch of smoky graphite. The palate is structured yet supple, with fine-grained tannins supporting flavours of dark berry fruits, earthy mushrooms, and a mineral streak. The finish is long, balanced, and refined.

Food Matching

Ideal alongside roast game birds, such as pheasant or quail, braised beef cheeks, or wild mushroom ragout. Also pairs well with aged Gruyère or soft triple-cream cheeses.
