Viticulture
Produced from organic and biodynamically farmed Sauvignon Blanc grapes from a vineyard rich in flint Silex soils as wells as smaller holdings on softer limestone and clay soils.
Winemaking
A white wine fermentation in stainless steel with indigenous yeasts for at least 4 months.
Tasting Note
This full-bodied white wine offers lively acidity and impressive complexity. Flavours of lime zest, grapefruit, starfruit, sorrel, earth, and truffle unfold on the palate, complemented by a striking smokey, saline minerality that lingers on the finish, captivating the senses.
