Winemaking
A white wine fermentation in stainless steel with indigenous yeasts for at least 4 months. The wine is aged on its lees for a period of 1 year in 50% oak barrels (1- 3 year old) and 50% in vat.
Tasting Note
This full-bodied white wine offers lively acidity and impressive complexity. Flavours of lime zest, grapefruit, starfruit, sorrel, earth, and truffle unfold on the palate, complemented by a striking smokey, saline minerality that lingers on the finish, captivating the senses.
Food Matching
Summer salads featuring citrus dressings, fresh herbs, or fennel, as its bright acidity complements vibrant, crisp ingredients. It's a classic match for soft goat’s cheese—especially Crottin de Chavignol or Valençay.
