Jean Marc Grussaute is producing some of the most sought after Jurançons at his 11ha Camin Larredya.
The dry wines are precise, powerful, but fresh and perfectly balanced. The sweet wines also display the same liveliness and precision; the residual sweetness is always in harmony with the crisp, balancing acidity.
Viticulture
The vineyards are planted on south facing slopes, 250 to 300 m above sea level, protected by westerly air currents at the top of the hill. Clay and loam soils with pudding stones. The vineyards are certified biodynamic.
Winemaking
After harvesting, the grapes are gently pressed, and the resulting must is transferred to oak barrels for fermentation. Indigenous yeasts are allowed to ferment the must spontaneously, imparting their unique flavours and aromas. During fermentation, the wine is regularly stirred to keep the yeast sediments suspended, extracting additional flavours and textures. The wine is then aged on its lees in the oak barrels, allowing the flavours to integrate and develop while the lees contribute to its texture and mouthfeel. The oak barrels also impart subtle flavours and aromas, complementing the fruit-driven character of the wine. The wines are aged on their lees for 8 months in oak casks to add structure and complexity.
