One Chain works with growers to source fruit from some of the most respected regions of South Eastern Australia.
They work to produce wines that are inspired by a love for one of Australia’s most cherished sports – the name ‘One Chain’ being the imperial measurement for 22 yards, or the length of a cricket pitch. Even so, you really don’t need to be a connoisseur of the game to be bowled over by the restrained, elegant style of One Chain’s Chardonnay or the bright red fruit and subtle oak of its Shiraz Cabernet.
Viticulture
Grapes are harvested by machine in the cool of the night from vineyard sites across South Australia.
Winemaking
Fruit is harvested at night when it is cooler, then immediately transported to the winery to be de-juiced, ensuring minimal skin contact occurs. Every effort is taken to reduce phenolic extraction from the skins, minimising the need for fining. Fermentation takes place in stainless steel tanks at controlled temperatures. The wine is bottled within a couple of months of completing fermentation to be enjoyed young.
Tasting Note
Pale to medium straw with bright hues. Citrus and lime flavours with some lifted vanilla evident on the nose. Pineapple, citrus and guava upfront on palate with clean acid finish. With mid-palate softness and fruit flavours persistent.
Food matching
Best served cold with grilled chicken, summer salads or shellfish.
