Domaine des Herbauges
Winemaker Jérôme is as committed to this as he is to the sustainability of his vineyards. Once harvested, he ferments at low temperatures to conserve the natural aromas of the fruit, then matures the wine on the lees from 8 to 14 months with regular bâtonnage. Bottling takes place straight after fermentation, leaving the wine with a light, natural spritz.
Viticulture
The estate spans a large vineyard area with parcels across some of the most prized sites of the appellation, particularly around the shores of Lake Grandlieu. Soils include schist, sand and clay‑limestone, contributing minerality and complexity. Sustainable agriculture has been practised for decades, with Terra Vitis and high environmental value certification, alongside techniques such as grass cover and careful site selection to control yields and express terroir. The main grape is Melon de Bourgogne, alongside other Loire varieties such as Chardonnay, Chenin Blanc and Grolleau.
Winemaking
Winemaking combines modern technology with a respect for tradition to highlight freshness and precision. Parcels are often vinified separately to preserve their individual characteristics, using temperature‑controlled fermentation at low temperatures to retain aromatics. Muscadet wines are frequently aged sur lie (on fine lees), enhancing texture, complexity and mouthfeel while maintaining signature crispness. The overall style is clean, mineral and expressive, with a focus on purity rather than oak influence.
