Entre Ciel et Mer – meaning Between Sky and Sea – is born from the unique landscapes of the Pays d’Oc.

Nestled between the sun-drenched Mediterranean coast and the rolling inland hills, the vineyards benefit from an exceptional climate: abundant sunshine tempered by cooling sea breezes. This balance creates the perfect conditions for Vermentino, a grape that thrives in warmth yet retains its vibrant freshness.

Viticulture

The grapes are harvested early in the season to capture their vibrant character. After a gentle pneumatic pressing, only the finest free-run juice is extracted. The clarified juice then undergoes temperature-controlled fermentation at 16°C to 18°C in stainless steel tanks, ensuring purity and precision. Malolactic fermentation is deliberately halted to preserve the wine’s crisp freshness and lively acidity. Finally, the wine is aged for four months on its fine lees, with regular stirring to enhance texture and complexity, before being bottled.

Winemaking

To craft a distinctive and beautifully balanced style of wine, the winemakers selected rugged terroirs in the eastern Pays d’Oc appellation, where vines enjoy abundant sunshine moderated by cooling sea breezes. The Pays d’Oc region boasts a rich winemaking heritage. First introduced by the Ancient Greeks, it is recognised as France’s oldest wine-growing area. During the Middle Ages, local abbeys pioneered techniques that remain fundamental to winemaking today. This unique combination of tradition and terroir ensures Vermentino delivers elegance, freshness, and unmistakable character.
