Domaine Vincent Dauvissat has long been regarded as being the finest estate in Chablis.
Founded in the 1970s by Robert Dauvissat, the Domaine has remained a family affair to this day, passed down through three generations. Robert’s son, René, he played a key role in building the Domaine’s esteemed reputation. His son, Vincent, then joined his father and now oversees the estate. A devoted following among France’s top restaurateurs keeps export quantities limited, but despite their scarcity, Dauvissat’s wines have earned acclaim from critics around the globe.
Viticulture
Sourced from sustainably managed vineyards on classic Kimmeridgian soils, La Forest benefits from a south-east facing slope that ensures optimum ripening. The vines are carefully pruned and trained to control yields and maintain balance, with organic practices encouraged to nurture soil health and biodiversity
Winemaking
Fermentation occurs primarily in stainless steel to preserve freshness, with a portion of the wine aged in older oak barrels to add subtle texture and complexity without overt oak influence. The wine spends several months on lees, with gentle bâtonnage to enhance mouthfeel. Bottled unfined and lightly filtered to retain purity and expression.
Tasting Note
The La Forest Premier Cru offers an elegant and textured Chablis experience. The aromas show white flowers, citrus blossom, wet stone, and subtle hints of toasted almond. On the palate, it is richly layered with flavours of ripe green apple, lemon curd, flinty minerality, and a creamy mid-palate texture balanced by vibrant acidity. The finish is long and saline, reflecting the limestone soils and maritime influence.
