Viticulture

The “Clos Sorbè” vineyard is situated directly opposite the Domaine buildings, covering a total of 3.3263 hectares, with the estate’s own parcel accounting for 1.2519 hectares. The vines, averaging around 50 years of age, grow on a limestone slab topped with red soil.

Winemaking

Vinification involved a long and harmonious alcoholic fermentation in wooden vats lasting around three weeks. Approximately half of the grapes were fermented as whole bunches, using only indigenous yeasts, with all movements carried out entirely by gravity. The wine was then aged for sixteen months in oak barrels, 40% of which were new, allowing it to develop depth, balance, and complexity while preserving its natural character.

Tasting Note

Morey-Saint-Denis 1er Cru Clos Sorbè shows the commune’s trademark balance of grace and grip. Aromas of dark cherry, wild strawberry, and violet meet subtle spice and earthy depth. The palate is supple yet firm, with red and black fruit framed by fine, chalky tannins and a cool mineral thread. The finish is savoury and persistent, suggesting forest floor and a hint of iron. Refined, quietly complex, and best with a few more years to open.

Food Matching

Roast duck or guinea fowl works particularly well, their richness lifted by the wine’s freshness and fine tannins. Game birds, pigeon, or venison loin also make elegant companions.
