This is the deeply personal project of Elena Pacheco and Isio Ramos, encapsulating the very different effects of terroir on their much-loved Monastrell grape.
Each wine comes from a different plot and expresses its startling individuality through microclimate, soil, aspect and age of the vines. The proojects spans two locations (Marín and Las Encebras), three specific plots (Mandiles, Vereda and Particiones) and one estate (Casa Quemada).
Viticulture
This vineyard plot is known as Vereda, named after the traditional drovers’ route once used for moving bulls that ran alongside it. Although the track has long since fallen out of use, it still creates a clearly visible division within the vineyard. One of the plot’s most distinctive features is its variation in soil types. The upper hillside is characterised by white, chalky soils that are low in organic matter, contributing a marked salinity to the wine. In contrast, the lower slopes at the foot of the hill contain fresher, more clay-rich soils.
Winemaking
Fermented in stainless-steel vats at a temperature controlled to 24-26 °C using natural yeasts. Aged in 500-litre French oak fudre for 11 months.
Tasting Note
The wine boasts exceptionally attractive fruit nuances and good acidity, which is enhanced by a noticeably high saline content in the mouth. Intense aromas of red berries, hints of cacao, quite spiced, balsamic, and earthy on the nose, followed by abundant flavour intensity, and slight hints of mellow spice combined with the red fruit. Rounded, ripe tannins, well-balanced and a finish which leaves you wanting more.
Food matching
Great wine for barbecues, grilled steaks and homemade stews. Delicious with grilled baby goat ribs.

Vereda is a parcel of Monastrell planted in 1973. Fermented in French oak vats and aged in 500-litre barrels for ten months, the wine is a seductive combination of dark, sappy fruit, wet stone and chocolate notes. The palate is peppery with impressive acid, and despite its high alcohol, the wine is balanced with just enough tannic grip. 2024 – 2028. 95 Points, TA, August 2024.
