Domaine Chatzivariti, Mosaic White (PGI- Slopes of Paiko), Kilkis, Goumenissa, Greece, 2023

Producer Profile
Founded in 1994 by Vagelis Chatzivaritis, the Chatzivaritis Estate is located in the heart of Goumenissa, Macedonia, Greece.
The winery spans 20 hectares of organically farmed vineyards across the regions of Bindabla, Filyria, Plagia, Pentalofos, and Griva. The estate cultivates indigenous Greek grape varieties such as Xinomavro, Negoska, Roditis, Malagousia, Muscat, and Assyrtiko, while also growing small plots of international varieties like Sauvignon Blanc, Merlot, Chardonnay, and Cabernet Sauvignon. In 2017, Vagelis’ daughter Chloi returned to Greece after winemaking studies in France and Portugal. She brought with her a modern, low-intervention philosophy, introducing natural winemaking techniques, including pétillant naturel and carbonic maceration.
Viticulture
The estate now follows environmentally conscious philosophies, aimed at a low-interventionist approach to obtain the best quality of grapes while preserving soil fertility. Organically cultivated vines in Bidablas for the Xinomavro, Roditis, Sauvignon Blanc and and in Filyria for Assyrtiko.
Winemaking
Roditis, Sauvignon Blanc and Assyrtiko are gently pressed and let to ferment in separate vats at low temperatures. Xinomavro is pressed and immediately separated from the skins, and then left to ferment at low temperatures. Following the alcoholic fermentation, the wines are blended together, with the final wine remaining in contact with the lees for 3 months before being bottled.
Tasting Note
A lovely light but expressive white wine. Citrus notes, peat and a hint of quince. Lovely acidity and some minerality on the finish.
