Sébastien Vincenti of Domaine de Fondrèche is widely recognised as one of the two best producers in Ventoux – and to make things even better, he adheres to a reasonable pricing policy despite his ever-increasing reputation and growing international demand.

The wines from his 38ha domaine are polished and seductive, yet Sébastien is always striving to improve, by using specific canopy management techniques to produce perfectly ripe, rich and harmonious wines. The estate has always followed an environmentally conscientious philosophy, with discipline and rigour aimed at a low-interventionist approach, and so received official organic viticulture certification in 2022.

Viticulture

Formed from ancient alluvial deposits, with limestone at the surface and a clay–sand texture beneath, these are the finest exposures and soil structures of the Fondrèche plateau. Shaped by the mountain’s influence in the heart of the Mont Ventoux Regional Nature Park, the site enjoys a unique microclimate and a beautifully preserved natural environment.

Winemaking

After a traditional white wine fermentation, the wine is aged on its lees for six months, with 80% in concrete vats and 20% in barrels, a process that adds texture, depth and refinement and allow the cuvée to express the clarity, freshness and mineral precision of its high‑altitude Ventoux terroir.

Combines the power and purity of the estate’s oldest vines with a refined aromatic profile of white florals, citrus and subtle orchard fruit, shaped by Ventoux’s mineral, high‑altitude terroir. On the palate, it shows texture, lift and impressive freshness, delivering an elegant balance of finesse and terroir‑driven vitality.
