Domaine de Suremain comprises 18 hectares of vines spread across some of Mercurey's finest appellations.

The property has been in the same family for seven generations and is currently run by Yves Suremain, his wife Marie-Hélène and their son Loïc. Vineyards are situated on the high-slopes and mid-slopes facing to the south and east, in the heart of the appellation.

Viticulture

he 1er Cru vineyard En Sazenay lies on southeast-facing slopes with limestone-clay soils, ideal for producing structured and mineral-driven Chardonnay. Domaine de Suremain farms sustainably using lutte raisonnée, minimizing chemical use and encouraging biodiversity. Yields are kept low to enhance concentration, and grapes are hand-harvested at optimum ripeness to preserve fruit purity and freshness.

Winemaking

The juice undergoes gentle pressing and fermentation with indigenous yeasts in French oak barrels, maintaining the wine’s natural expression. Around 20% new oak is used, and the wine is aged on its lees for 10–12 months with occasional bâtonnage. This process builds texture and aromatic depth while retaining the vibrant acidity typical of the terroir.

Tasting Note

A refined white Burgundy showing ripe orchard fruits—pear, apple, and white peach—alongside citrus zest, almond, and subtle lees like notes. The palate is fresh and textured, with balanced acidity and a touch of saline minerality on the finish.

Food Matching

Perfect with roast chicken, scallops in butter sauce, creamy mushroom pasta, or firm cheeses like Comté. Its balance of richness and freshness makes it adaptable to a wide range of elegant dishes.
