Located in the heart of Chablis, Domaine Long-Depaquit is an exceptional 52-hectare estate and one of the most important vineyard holdings in the appellation.
The estate combines a long Chablis heritage with a precise, contemporary approach to viticulture and winemaking. Low yields, site-by-site management and minimal intervention create wines defined by purity, minerality and elegance. A new, environmentally conscious winery was built in 2014, allowing individual parcels to be vinified separately and giving the wines even greater precision. The domaine produces an extensive range spanning Chablis, Premier Cru and Grand Cru, and is particularly renowned for La Moutonne, its unique 2.35-hectare Grand Cru monopole situated between Vaudésirs and Les Preuses. The estate has been certified organic since the 2025 vintage.
Viticulture
Sourced from Domaine Long-Depaquit's 11.98-hectare holding in the prestigious Vaillons Premier Cru, this Chardonnay is grown on reddish-brown clay-rich soils over Kimmeridgian marls. The 46-year-old vines are spread across several climats on the Vaillons hillside, including the renowned Epinottes climat. Variations in slope and exposure across the vineyard contribute complexity, concentration and aromatic nuance to the finished wine.
Winemaking
The grapes are harvested by hand, carefully sorted and gently pressed to preserve fruit purity and terroir expression. Alcoholic fermentation is followed by ageing on fine lees, building texture and complexity while maintaining freshness and precision. The careful blending of multiple vineyard parcels enhances the wine's balance and aromatic depth. The wine is aged on fine lees for 10 months, with 90% matured in stainless steel vats and 10% in French oak barrels ranging from one to five years old. It then spends a further two months ageing in stainless steel, ensuring freshness and harmony while adding subtle complexity.
Tasting Note
Elegant and expressive, this Chablis Premier Cru reveals aromas of fresh orchard fruit and white flowers. The palate is generous yet vibrant, combining ripe fruit character with refreshing acidity and classic Chablis minerality. Beautifully balanced and refined, it concludes with a long, mouthwatering finish.
