Located in the heart of Chablis, Domaine Long-Depaquit is an exceptional 52-hectare estate and one of the most important vineyard holdings in the appellation.
The estate combines a long Chablis heritage with a precise, contemporary approach to viticulture and winemaking. Low yields, site-by-site management and minimal intervention create wines defined by purity, minerality and elegance. A new, environmentally conscious winery was built in 2014, allowing individual parcels to be vinified separately and giving the wines even greater precision. The domaine produces an extensive range spanning Chablis, Premier Cru and Grand Cru, and is particularly renowned for La Moutonne, its unique 2.35-hectare Grand Cru monopole situated between Vaudésirs and Les Preuses. The estate has been certified organic since the 2025 vintage.
Viticulture
Domaine Long-Depaquit's Les Vaudésirs Grand Cru vineyard extends across 6.42 hectares of calcareous clay soils over Kimmeridgian limestone marls, the geological hallmark of Chablis. The 27-year-old Chardonnay vines are planted on steep, south-facing slopes within the heart of the Grand Cru sector, benefiting from excellent sunshine exposure. The abundance of Kimmeridgian outcrops contributes the pronounced mineral character for which this prestigious climat is renowned.
Winemaking
The grapes are harvested by hand and carefully sorted before gentle pressing to preserve fruit purity and vineyard expression. Alcoholic fermentation is followed by ageing on fine lees, enhancing texture, complexity and aromatic depth while maintaining the freshness and precision that define Grand Cru Chablis. The wine is aged on fine lees for 10 months, with 75% matured in stainless steel vats and 25% in French oak barrels ranging from one to five years old. This is followed by a further six months' ageing in stainless steel, allowing the wine to integrate and develop additional complexity while retaining its mineral purity.
Tasting Note
Elegant and intensely mineral, this Grand Cru Chablis reveals refined aromas of citrus fruits and white flowers. The palate is concentrated yet precise, balancing ripe fruit richness with vibrant tension and distinctive Kimmeridgian minerality. Complex, structured and beautifully focused, it delivers exceptional length and finesse.
