Sebastien Giroux, Macon Fuissé, Les 2 Bois, Burgundy, France, 2020

Producer Profile
Nestled in Fuissé, within the Mâconnais region—an area stretching 50 kilometres in length and 15 kilometres in width between two valleys—Domaine Sébastien Giroux produces dry white wines exclusively from Chardonnay.
The estate crafts wines from the renowned appellations of Pouilly-Fuissé, Pouilly-Loché, and Mâcon-Loché. A family-run domaine with a winemaking legacy spanning over 300 years, it was taken over by Sébastien Giroux in 2009, following a career in motorsport mechanics. With a vision to modernise while honouring tradition, Sébastien has elevated the estate’s reputation for producing high-quality, terroir-driven Chardonnays at compelling value.
Viticulture
Planted between 1982 and 1987 at a density of 8,000 vines per hectare, the vineyard sits at 320 meters altitude, nestled between two villages and two forests. The soils are composed of silty limestone, providing excellent drainage and mineral expression. Certified organic since 2013, the vineyard is manually harvested with yields around 45 hl/ha.
Winemaking
Grapes undergo slow, gentle pressing, followed by cold fermentation using only native yeasts. The wine is aged for 18 months on fine lees in stainless steel tanks, enhancing texture and complexity. A light filtration is applied just before bottling to preserve purity.
Tasting Note
A light straw hue with golden reflections sets the tone for this refined wine. On the nose, it reveals delicate and subtle aromas, opening gradually with ripe fruit, citrus, peach, and a touch of minerality. The palate is rich and expressive, offering crisp, juicy freshness balanced by impressive density and intensity.
Food Matching
A great wine for some asian/ thai spice and a little heat. Perfect with grilled fish.
