Earthsong is a New Zealand project from the team behind Thistledown Wines in South Australia, created to express the purity, texture and vibrancy of Marlborough.

With a deep connection to place, the focus is on single‑vineyard wines that reflect the character of their sites across the Riverlands, Dillons Point and the Southern Valleys. The original Single Vineyard Sauvignon Blanc from Dillons Point established the Earthsong style: tropical intensity, saline freshness and a vivid sense of place, all shaped by a sustainably accredited vineyard and a winemaking approach centred on precision and purity. Legato Single Vineyard Sauvignon Blanc offers a more textural, harmonious expression, showing layered fruit and a softer, more nuanced balance that highlights another facet of Marlborough’s terroir. The Southern Valleys Single Vineyard Pinot Noir extends the range into red wine, drawing on clay‑rich slopes that naturally deliver depth, structure and darker fruit. Its fine tannins and restrained power show Marlborough’s ability to produce Pinot Noir with both vibrancy and poise. Across the range, sustainability is central, aligned with Sustainable Winegrowing NZ™ standards. Winemaking remains minimal and focused, aiming to capture each vineyard’s character with clarity, balance and respect for the land.

Viticulture

Fruit is sourced from organically managed vineyards, where careful canopy management and controlled yields encourage even ripeness and concentration. The vineyard’s proximity to the ocean contributes to a cooling influence, helping preserve natural acidity and enhancing the wine’s subtle saline character. Attention to vine balance and fruit exposure ensures a style that leans towards finesse and texture rather than overt intensity.

Winemaking

A considered approach to winemaking focuses on building texture and complexity. A significant portion of the fruit is hand-harvested and gently pressed, with fermentation taking place in a combination of oak vessels and stainless steel. Wild fermentation plays a key role in shaping character, while extended maturation on lees enhances depth and mouthfeel. The wine is assembled with minimal intervention to preserve purity and expression.

Tasting Note

The Legato single vineyard Sauvignon Blanc offers a refined and layered expression of the variety, opening with aromas of stone fruit, citrus curd and delicate white florals, alongside subtle hints of grapefruit pith, fennel and savoury complexity. The palate is textured and quietly powerful, built around a smooth, flowing mid-palate supported by fine acidity. A mineral and lightly saline edge carries through to a long, composed finish, making it a wine that rewards slow appreciation rather than immediate impact.

Food matching

It works particularly well with seafood such as grilled fish, scallops or oysters, as well as herb-led dishes and light poultry preparations. Soft cheeses and vegetable-focused plates also highlight its layered complexity.
