Viticulture
The vineyards lie around Noto in south-eastern Sicily, an area renowned for its warm Mediterranean climate and abundant sunshine. Cooling sea breezes from the nearby coast help to moderate temperatures, preserving freshness and aromatic complexity in the fruit. The vines are cultivated on well-drained soils, with careful canopy management and controlled yields ensuring excellent concentration and balance. Grapes are harvested at optimum ripeness to capture the full expression of the local terroir.
Winemaking
The grapes are carefully selected and gently crushed before fermentation in temperature-controlled stainless steel tanks. Regular pump-overs and extended skin contact extract colour, flavour and fine tannins while maintaining elegance and balance. Following fermentation, the wine undergoes a period of maturation to harmonise its fruit and structure, resulting in a smooth, approachable style that showcases the richness and character of Sicilian red varieties.
Tasting Note
Deep ruby red with lifted aromas of black cherry, blackberry and ripe plum, complemented by notes of Mediterranean herbs, sweet spice and a touch of liquorice. The palate is rich and velvety, combining generous dark fruit flavours with fine tannins and refreshing acidity. Well-balanced and expressive, it finishes long and savoury with lingering notes of spice and wild berry fruit.

An excellent match for grilled lamb, slow-cooked beef dishes, pasta with rich tomato ragù, roasted aubergine, wild mushroom recipes and mature cheeses.
