Producer Profile

Olivier Leflaive is a respected négociant and wine producer based in Puligny-Montrachet, in the heart of Burgundy’s Côte de Beaune.

Emerging from a long line of Burgundian vignerons, Olivier Leflaive founded his own house in the early 1990s, branching out independently from the famed Domaine Leflaive. Today, the estate encompasses approximately 17 hectares of owned vineyards and sources fruit from over 100 hectares of contracted growers across Burgundy, including prestigious areas such as Chablis, the Côte Chalonnaise, and the Côte de Beaune. Known for its refined white wines, the house also maintains a small but focused production of red wines and Aligoté. Beyond winemaking, Olivier Leflaive has become a benchmark for Burgundy hospitality, offering luxurious accommodations, vineyard tours, and fine dining through its award-winning hotel, bistro, and Klima restaurant.

Viticulture

Once abandoned following the devastation of phylloxera in the 1880s, this area was thoughtfully replanted in the 1950s. It comprises a harmonious blend of four distinct vineyards nestled between Saint-Aubin and the renowned terroir of Les Truffières. The site features rich brown limestone soils that promote a slower, more nuanced ripening process, contributing to the wine’s depth and complexity.

Winemaking

100% whole grape pressing, preserving the delicate aromas and pure essence of the fruit. Following a gentle 24-hour static settling to achieve exceptional clarity, both alcoholic and malolactic fermentations gracefully unfold in oak barrels, adding layers of complexity and richness. The wine then matures for a refined 18 months—12 months in elegant oak barrels followed by 6 months in stainless steel tanks—allowing seamless integration and balance. Crafted entirely in oak barrels, with 10% new oak imparting subtle spice and texture, this meticulous process yields a wine of remarkable depth, finesse, and purity.

Tasting Note

This is a wine that skilfully reveals the limestone terroir with its lovely minerality as well as notes of acacia. White peach reveals itself subtly in the mouth, enhanced by a slightly smoky character.

Food Matching

Ideal with scallops and parsnip purée.
